How to Make Chocolate Ice Cream with Raisins

Raisins, not only green raisins but also red raisins, are great ingredients to make ice cream. Nowadays, people tend to make raisins ice cream at home, conveniently and easily. The reason why people prefer raisins as stable ingredients to make ice cream is rich nutrition, good taste and acceptable price.

Ice Cream with Raisins

Ingredients to make chocolate ice cream with raisins:

160g chocolate, 500ml milk, 30g unsalted butter, 125ml shipping cream, 5 egg yolk, 50g caster sugar, 75g honey, 125 red raisins.

Ice Cream with Raisins

1. Place chocolate in a large bowl and set aside. Bring milk, butter and half the cream to just below the boil in a saucepan over medium heat.

2. Meanwhile, whisk yolks and sugar in a bowl until pale and creamy (2-3 minutes), then, whisking continuously, add milk mixture and whisk to combine. Return to a clean saucepan and stir continuously over medium heat until mixture coats a wooden spoon thickly (5-6 minutes).

 3. Strain through a fine sieve over chocolate, whisk to combine, then set aside to cool.

4. When cool, stir through honey and remaining cream and refrigerate to chill. Freeze in an ice cream machine, then freeze until required, makes about 1 liter.

5. Scoop ice cream into serving bowls, spoon over raisins and serve.
